healthy cookies

if you know me, you know that i have an addictive personality. my current flavor is giada de laurentis. i love her. i love her food. i love her show. i love giada. she has inspired me to venture into the wonderful world of cooking. i’m a mad man. one recipe that i have mastered is healthy cookies. melanie kotecki may have started it, but now i own it. by popular (not really) demand, i am posting the recipe here. the secret…whisking by hand. by hand only. and like you mean it. here it goes…

  • 2 1/4 c wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/4 c xylitol (natural sugar substitute, you can find it at a natural food store or Whole Foods)
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 c chocolate chips (ok…these aren’t healthy….but so delicious)
  • 1 c natural, unsweetened apple sauce (1 individual package)
  1. preheat oven to 375 degrees
  2. combine flour, baking soda, salt in small bowl
  3. beat apple sauce, xylitol, vanilla in a large bowl
  4. beat eggs into large bowl one at a time
    • it’s important to do one at a time. don’t ask why. just do it. it helps the consistency of the final product
    • and word to the wise…if you aren’t confident breaking eggs, break them into a seperate bowl before mixing into the large bowl…this will help you avoid nasty little shell bits
  5. beat dry ingredients into large bowl
    • beat in (by hand) 1/3 of dry ingredients at a time…it will be easier on you and will give a smother texture to the cookie
  6. place on a cookie sheet and bake for 9 minutes
    • if you use a spoon or even ice cream scoop for the cookies, it will help you ensure they are the same size and bake evenly

remember, no power mixers allowed.
